Zero Waste by 2025
At Danté Restaurant, we are committed to minimising our environmental footprint and embracing sustainable practices. We believe that small changes can make a big difference, so we're excited to share our green initiatives with you.
Source Local and Seasonal Ingredients. Locally produced food reduces the carbon footprint associated with transportation and supports nearby farmers and producers. Additionally, using seasonal ingredients ensures freshness and reduces the need for energy-intensive storage and preservation methods.
Our Garden. We operate our small garden and grow all our herbs and a few vegetables for our restaurant. We are also in the process of redesigning our kitchen and the back area of the building to create more space for vegetables and herbs growing closer to the restaurant and ensure less food waste.
Waste Reduction Program. We minimise food waste, accurately portion dishes, and creatively repurpose leftovers. For example, we repurpose the leftover juice from cucumbers and make a beautiful cucumber margarita as a daily special.
Composting and recycling. Although we love recycling, we are trying to minimise it by not having to use packaging for our products. We are also eliminating plastic and replacing it with glass containers when needed. Composting is our latest sustainability practice, and we are incredibly proud of it. We use our food waste to feed the soil of our garden. Both practices are helping to increase efficiency, decrease energy consumption, and, most importantly, help us get a Zero-waste status by the end of the year.
Sustainable Energy and Water Usage. We use energy-efficient appliances, smart LED lighting, and water-saving fixtures. We train and encourage staff to practice energy conservation habits, such as turning off lights and equipment when not in use.
Plant-based and Sustainable Menu Options. We offer plant-based and Sustainable menu options with a lower environmental impact than meat-centric dishes. We incorporate plant-based proteins, locally sourced vegetables, and sustainable seafood choices. By diversifying the menu with eco-friendly options, restaurants cater to a broader range of dietary preferences while promoting environmental sustainability.
Eco-friendly cleaning products. Regular cleaning products contain harsh and harmful chemicals that pollute the water and air. Conversely, we use environmentally friendly cleaning products that are free of chemicals and better for your health.
Eco-friendly cutlery and packaging. Our restaurant uses no material that cannot be recycled or repurposed. For example, we use metal straws, linen napkins, and metal garnishing pins. But the biggest change is in our kitchen. Traditionally, the use of cling wrap and foil is a day-to-day practice. Instead, we use stainless steel trays with lids and beeswax food wraps if needed.
Choosing Sustainable Providers. To achieve Zero-waste status, we need help from our business partners. Our meat, seafood, and cheese providers were all happy to eliminate their plastic packages and find sustainable, eco-friendly options for us. As the saying goes, 'It takes a village to raise a child,' and our child is this amazing opportunity to be a Zero-Waste Restaurant.
With these initiatives, we are striving towards our goal of achieving Zero Waste status by 2025.
